For safety purposes I would fuel at truck stops. They are well lit and there are usually a lot of people around. So if I were too want to travel across Texas and Arkansas I would go to the following truck stop company sites.
Try The Flying J http://www.flyingj.com/, T/A aka Travelcenters of America http://www.tatravelcenters.com/, Pilot Fuel Centers http://www.pilotcorp.com/ and Petro Truck Stops http://www.petrotruckstops.com/. These sites will have all their locations listed. Save them to a file in your computer and then map your route accordingly.
Additionally you can go to http://www.natsn.com/ The North American Truck Stop Network for any lags in coverage.
Try to pick the larger more well known companies or stops that have multiple truck stops at that particular interchange on the highway.
