Other than Cathay Pacific and Korean Air, many other airlines have direct flights to Canada, especially to Vancouver. If you're flying to Vancouver, there's China Airlines from Taipei, Air China from Beijing, China Eastern Airlines from Shanghai, Japan Airlines from Tokyo, Philipine Airlines from Manila, Eva Air from Taipei, and Singapore Airlines from Singapore Ofcourse, there's Air Canada, which flies to Hong Kong, Beijing, Osaka, Tokyo , Seoul and Shanghai. Air Canada will also be flying to Guangzhou starting summer of 2007.

If you're flying to/from Toronto, there is Air India serving Delhi and Mumbai, Cathay Pacific serving Hong Kong, Korean Air serving Seoul, and Air Canada serving Hong Kong, Beijing, Shanghai, Seoul and Tokyo. Air Canada does fly to Delhi but this service will be terminating some time in April 07.

In general, Vancouver is the city where most flights from Asia go. Toronto gets more flights from Europe and charters to the carribean. If you're flying to/from southeast asia, then you might need to connect somewhere because the only flights between Canada and Southeast Asia that I know of are the Singapore Airlines flight between Vancouver and Singapore and the Philipine Airlines flight between Manila and Vancouver. It is possible to connect in the United States and take Malaysia Airlines or Thai Airlines International. Malaysia Airlines fly to Newark and Los Angeles and Thai Airways International flies to New York City and Los Angeles. Singapore Airlines also fly to several destination in the US.

I strongly recommend flying Cathay Pacific when travelling to Asia because they have many destinations where they fly quite frequently to in the Asia Pacific and Southeast Asia areas. They fly to Vancouver, Toronto, Los Angeles, New York City and San Francisco. Great service too.
