I am thinking of traveling to europe to visit friends and work and I am thinking of just booking a one way to London then to some other destinations, do I need to book my return flight before leaving or will I be ok as long as I have flight booked out of the country to another one to go see friends and see how it goes??

Book an open ended ticket - that way you have three-six months to fly the return portion (which can be booked while over there) and don't pay as much as one way fares cost.

Since this is a multicity trip the last stop is the one you need to focus on and it all depends on what that destination is; with all the terrorism fears travel rules have become more stringent so you'll likely be required to have a return ticket unless you fall in the exempt category like dual citizensip (Canadian and EU), diplomatic, etc. (and even then it still really depends on the destination)

If it's that you're not sure when you'll be returning you can check your travel agent/airline for an open ticket, it costs more than an average ticket - cuz it's not an average ticket; it's usually valid for one year and when you're ready to return you just call the airline and secure the flight.

It's limiting not knowing what your other destinations are but I hope that what I could tell you helps in some way.

Have a great trip!

most countries require you to have a return ticket before they will let you in
just buy an open ended ticket so you can choose the date you fly at a later date

Let me put it this way at no time has any customs agent ever asked to see my return ticket with the possible exception of Cuba I just give them everything and they pass what they don't want back. Also make sure that you have the proper visa(s) to allow you to work in the country(ies) that you will be travelling to.
