my husband is a truck driver and he's gone for several days at a time. I don't want him to eat junk so I pack food for him in a cooler. I am out of ideas! I need inspiration for things that are good cold and keep for a few days. thanks!

As long as the cooler has ice and stays cold, it is basically the same as a refridgerator. Here are some things to put in there:
Pre packed salad Deli cold cuts/cheese Breads Condiments Fruits (apples, oranges, nectarines, etc. Stay away from soft fruits such as bananas) Hard boiled eggs Here are some things that don't need to be kept cold Pita chips/pretzels (much healthier) Beef or turkey jerky Nuts And why not give him some money to buy healthy road food. Subway and Boston Market are good options that are healthy and filling. Just make sure he knows what to order! (No mayo, no mashed potatoes!!) |

Just an idea, check out Wal-Mart and buy a small 12V cooler that plugs into the cigarette lighter. Most truckers swear by them. Small ones are 45-50 bucks, the bigger ones are $70ish but worth their weight in gold.
Also, keep in mind most truck stops have microwaves that are free to use. You can make some home-made soups, or Crock-Pot some hearty beef stew or chicken and rice, and put individual servings into Tupperware. All he's gotta do is nuke it when he stops for fuel at a truck stop. The other answer about Subway is a good idea, you can't throw a rock without hitting a Pilot, TA or Love's with a Subway in it....to save money, you can buy fresh deli meats and cheeses for the cooler, and your husband can just go buy a footlong Veggie Sub with his choice of veggies and condiments. It's cheaper than a footlong with meat on it, plus your local grocery store will have a better variety of meats than Subway will. |
