It's true that gravity helps a lot but even in 0 Gravity the peristaltic movements of the esofagus ensure the contents go (more or less) to the stomach.

I believe this statement to be false. It's not gravity which guides food along the esophagus but the peristalsis movement of muscles which helps to move the food. If there was no mechanism in our body then the food we swallowed would remain on the top of our esophagus regardless of the presence of gravity.
