Um, I can't be certain, but I know that fruit and vegetables do not pass customs in any country. Customs in Bangkok seems pretty lax, but I would never advise anyone to rely on "skirting through" if they are on a special diet.
I don't what your diet is specifically, but there are so many restaurants and vendors around. You can buy fresh fruit and veggies almost everywhere, and order nice seafood cooked however you want it. If sodium is an issue, ask for your things to be grilled fresh with no fish sauce or marinade. Chili and lime can be used for flavor with no harmful effects for most diets.
I would advise checking out Thai dishes on google, and finding out what you can do to keep up your diet the best you can with the food that is there. If you need pre packaged snacks like nutrition bars, etc--that will be fine at the airport.
