Little packs of oatmeals or soups. If you get an immersion water heater (see link for example) you can boil yourself of cup/bowl of anything you like.

This isn't food, but I recently came across this product by Hillside. It is a self-heating container for hot chocolate or coffee. I bought one to try it out and it heats itself in 5 to 8 min, I thought it was pretty interesting because I hadn't seen anything like that available before.

I like the Kashi trail mix bars (there are other good brands but many have way too much sugar in my opinion). They're tasty, nutritious, filling and have enough fiber to help take the curb off your hunger and help maintain digestive regularity. Also apples are good (harder than other fruit so they're less likely to get smashed), you just have to make sure they don' t have any bad (mushy, rotten) spots..Red Delicious are my personal favorite. Peanut butter sandwiches are a quick portable nutritious snack but you have to make sure they don't get smashed (they sell little plastic boxes at Wal-Mart and places like that). Carry some wet wipes with you to clarn your hands before eating and get the juice off your hands afterwards and you have to dispose of the cores (of course). Finally make sure to pack water (unless travelling by air, then you have to pay through the nose and buy it inside the airport since most airports now won't let you carry it through security...even if the bottle is still sealed from the store) but it's very important to stay hydrated and especially when travelling by air you need extra fluids.
