I am no expert but, I saw a show called Unwrapped: Road Food on the Food Network. They stopped at some cheese castle in Wisconsin. The owner said that Cheese is the perfect on the road food since it does not actually need refrigeration until it is opened. I hope that helps you. Also, I do cook alot, Cheese would be less likely to melt if you were traveling with it. If it does soften up, just pop it in the fridge for a little bit.
