I went about a month ago (May 25 - Western Caribbean) and although I don't know about the other cruise lines, I had a blast. They catered to my special diet, as well as, provided my 6 month old with a crib in our stateroom and a high chair at dinner served with mash potatoes on every single night, unless he was asleep. But that didn't stop them from asking if I needed the above. The shows after dinner were fabulous and everything is pretty much aimed for the younger crowd. I went on another cruise with NCL and Carnival makes them look bad. NCL barely catered to my needs and were not willing to either. I ate baked potato and salad almost everyday. They seemed uptight, whereas, Carnival made sure everything was perfect and it was. The ship itself is huge, but I didn't find it to be confusing. I can't even think of any downfalls to tell you. The food was really good, the shows were great, the staff was all smiles and very friendly and I had a really good time!
