In Nicaragua, on the Pacific Coast, the best beaches to visit are San Juan del Sur (there are a lot of restaurants on the beach front, and also many souvenir shops there. The water before 4pm is nice and cold-ish, but that is all too well because of the heat here. San Juan del Sur (SJDS) is located in southern Nicaragua in the Department of Rivas, other very beautiful beach near there are Maderas, Majagual (beautiful scenery) and La Flor. In the Department of Managua, nothing compared to Montelimar Beach, it is a private beach and the cost for entrance is $55 for adults but well worth it. A breakfast, lunch and dinner buffet are included, as well as an hour rental of any motorized speed boat. In the Department of Leon, Las Penitas is the best beach.
On the Caribbean coast of Nicaragua i can only recommend the beaches on the Corn Islands. The Corn Islands are only an hour plane ride away from the capital city of Managua. The beaches in the Corn Islands are the absolute best in Nicaragua. It is no where near "too touristy" and food, souvenirs, ect. is very cheap there. I go there often with my family and to visit my two cousins who live there. Also, you can take a boast ride to Bluefields, which is the closest city on Mainland Nicaragua from the islands. There is a lot to do in Bluefields and the city is beautiful, the people are very cultural and they speak English, Creole, Spanish and Indigenous languages there.
I would also recommend the beaches on Roatan Island of the Caribbean coast of Honduras and all of Belize.
