Take advantage of cheaper fares by booking as far in advance as possible. This is a really good website to find the cheapest flights: http://www.openjet.co.uk/index.jsp
I'm sure you know that August is winter in Australia and it can get pretty chilly. Not as cold as England, but still single figures in celcius.
Save time and money by booking internal flights in Australia, definitely the best way to travel otherwise you may be stuck on a bus for 20 hours. Hotels can be found here too:

This website is great for finding cheap places to stay, just choose your city and nights then narrow the search to budget hotels...
So many places to go - Melbourne, Sydney, Gold Coast, Cairns - you don't say how long you intend to visit, so there are plenty of other places, these are just the main ones.
You can also stopover and see another place on the way there or back, or both. The long haul flight is really hard and it's great to break it up by stopping over. Depending on the airline, Singapore, Hong Kong, Kuala Lumpur, Bangkok are the main stopover destinations. A couple of nights stay makes jetlag easier to deal with.
