Does this situation mean I need a multiple-entry visa, since I am entering the country 2 different times? So is this not possible for me?

Yes, if you are entering twice you will need a multiple entry visa to china. As far as I know they do not have a quick visa processing service at the Kyrgyzstan border or in Kyrgyzstan, so you should sort that out before beginning your trip.
