International law doesn't set tight restrictions on jurisdiction. Generally, a crime committed on an airplane or a ship traveling in international territory is handled by the nation that owns the vessel in question, however, for the sake of convenience, prosecution can also be handled by the destination country, or by the country of origin by returning the person to where they started, or even by handing the person over to their country of nationality to handle the matter.
