depending on your destination and your budget really. You can't just pick any airline not keeping in mind where their hub is located and where they fly to.
Other than that, generally speaking, given the details provided of your trip i would really stick to the following:

Singapore (a little expensive but worth it), Thai, Malaysian are definitely top notch for travelling through (to and from) south east asia (top service and good amenities and decent food) give their excellent cabin crew. Cathay Pacific also has an excellent network and is far reaching throughout mainland china ( a little expensive though), definitely known for its good and attentive service level. Not too sure about Dragon air, which is a regional carrier now owned by Cathay, should offer connections within China.
China airlines offers excellent value and attentive service but limited destinations, namely to and from Taiwan (not too sure about their flight safety record). As far as the north asian region, i would suggest (according to your destination whether korea or japan) either ASIANA or ANA (i think they both offer overall better service compared to the national carrier counterparties).
i would avoid vietnam airlines, air china, china southern and china eastern (especially cattle class, not because flying in economy but because of the problems you encounter with their staff: poor command of english, attitude issues in dealing with customer requests, awful customer service)
