Here's my personal experience:
De Bolhoed is great for lunch. Cozy vegetarian place with a cat or two, good music, and an informal, hippy-ish feel.
Green Planet is nice for dinner. Very good food with a lot of vegan options and interesting teas and other drinks. Unfortunately, the service has not been very good. It felt like the staff were new and hadn't been trained, but they seemed to be trying.
De Waaghals is stylish and very nice. Fine if you can eat dairy; menu options are somewhat limited if you can't.
White Elephant is not especially vegetarian, but it has good Thai food with good vegetarian options like a lot of other ethnic restaurants in Amsterdam
MAOZ is everywhere and great for a quick and tasty falafel.
Avoid any croquetten & bitterballen you encounter, as they are made from liquefied meat (including horsemeat, people say). . .
