My friend tells me de Spijker, at Kerkstraat 4 is a nice place, but whether it's 'happening'... alternatively, De Trut is a good night out on a sunday and very popular:

I guess the Supperclub (it's a club, so you'll need a reservation to eat) http://www.supperclub.nl/ and De Kas (dine on veggies from the greenhouses surrounding the restaurant) http://www.restaurantdekas.nl are the most hyped, but there are plenty of other options. Head to the quarter called the Jordaan for an authentic Amsterdam experience.
