5 hours between flights is nothing, and especially in the summertime when passport control queues can be huge, it is not feasible to go to Amsterdam centre
Actually Schiphol is quite a nice airport (as long as it is not over-busy on that day!), and does offer some things for kids to do/see (although 8 months is a tricky age (mine are 22 months and 6 months so I know what you mean!) Mine tend to get excited on trips, so it may be a good idea to just walk about with him in the buggy so he can get a bit of sleep. There are some nice comfy "lazy"chairs (if not taken) which you two can settle down in as well
There are plenty of restaurants and a play area for toddlers - e.g. a restaurant called Touch Down, above Departures 1, where there are fun things to eat for kids and also if I recall they show films, and your little one can watch the other kids playing in a play area - climbing, balls etc. Next to it is the Panorama terrace so you can watch the planes (although this does tend to get busy quickly)
Otherwise there is a Burger King, McDonalds & a pizza place that all serve kids meals and have play areas (but nothing really special)

If you did want to leave the airport then both of you can do this (British passport being EU, & US falling under the waiver program - so both no problem), but as I said, unless it is just to grab some air outside for the little one, I wouldn't recommend trying to leave too far.
